Self love banana and date loaf

 

Not all snacks are created equal. And when it comes to postpartum, one-handed foods are king!

Banana bread’s an old classic and don’t ask me how but this one holds up with no eggs so it’s actually vegan. Sub in dark chocolate or walnuts as you wish but I love dates too.

Make a double batch, wrap one up and drop it off to a new mum (or maybe an experienced but tired mum who would be delighted to receive a tasty, unexpected love bomb on her doorstep).

Banana and date loaf

Ingredients

  • 4 overripe bananas

  • 1 ½ cups plain flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • ½ cup caster sugar

  • 2/3 cup coconut oil, melted

  • 1tsp vanilla concentrate

  • ½ cup chopped dates (dried or Medjool)

Method

  1. Preheat your oven to 180 degrees Celsius

  2. Mash bananas until pureed. Add vanilla, oil and sugar, then beat again until combined

  3. Fold in the flour, raising agents and salt until combined.

  4. Fold in dates, pour batter into loaf tin lined with baking paper.

  5. Bake for 45 minute to one hour, until a skewer comes out clean. Cool on rack.
